What are your favorite methods to preparing Trout besides pan-frying? I love grilled Brookies with fresh morels or leaks, or occasionally Blue Trout if I'm feeling fancy, and I'll smoke a couple batches every fall. Anything new I should try?

Id love to see a few replies here! I need to expand my repertoire this year. Pan frying is always a winner, but my wife can't stand the smell (not sure how I ended up married to someone who can't stand the idea of eating fish. IM working on my kids to make sure she's the one that is outnumbered and not me!)

Otherwise, I usually grill in a foil packet; I mess around with various seasonings and whatever vegetables I might have on hand along with lemon and onions.

I like mine done in the pan with a white wine, lemon, butter, and caper sauce.

Dust the filets in flour and cook in unsalted butter. When the fish is done, take it out of the pan and add some more unsalted butter and brown the butter. Deglaze the pan with 1/2 cup of white wine and reduce the volume by half. The sauce should be a little thick. Take the sauce off the heat and add 1/2 teaspoon of grated lemon zest, 1 tablespoon of the lemon juice, and 2 tablespoons of capers.

Put the sauce over the fish and serve. You do not have to use unsalted butter, but sometimes capers can be really salty.

...this recipe is a northwoods take on a "chinese" classic...

SMOKED TROUT/SALMON and CREAM CHEESE WON TONS! (TROUT RANGOONS)

...i start by setting out 2 packets of cream cheese and turning on the PACKERS pre-game, (substitute BREWERS if not in season).. maybe crack an alcoholic beverage of your choosing..

then i enjoy 30mins of pregame and drink.... after that your cream cheese should be about room temperature..

slap that cream cheese in a mixer and start whipping it up...then i add 4 HEAPING handfuls of smoked trout/salmon and 1/4cup of chopped wild leeks,then i dowse with a couple spoonfuls of liquid aminos.... let it beat the shit outta that for a little while...

then just start putting about a spoonful of your mix into the middle of the won ton wrappers...using your fingers, wet the edges of the wrap and press to seal them, trying to get all of the air out of them...

heat up some vegetable oil and fry those little bad boys until golden brown... not very long...MAYBE 1minute....

...grab your favorite dipping sauce and dunk...now put into your face-hole...WINNING!ThumpUp

...my secret to cooking/baking.... add smoked fish to everything...


makin a pizza?? why not slap some smoked fish on there???

..this is how i like to do it...

....i buy these premade stuffed crusts cuz im lazy..

... i smother that crust in homemade marinara sauce and top with a good organic mozzarella..

...maybe chop up some wild leeks if its the right time of year...

...then HEAP up a few handfuls of smoked trout/salmon...

shove it in the pizza oven at 420* for 14min... take it out at the ten minute mark and drizzle some BBQ sauce all over that bad boy...shove it back in for 4 mins....

enjoy!

THE MENAGE-A-TROUT BURGER

..okay, this one is my own personal take on a burger known as 'The Juicey Lucy'

...so make up some smoked trout/salmon cream cheese mix just like in my rangoon recipe..

...now fry up a pound of bacon till its crunchy...

...then crumble that bacon into a pound or so of ground burger, i prefer venison..

...start pattying up some burgers...

... now scoop a heaping spoonful of cream cheese trout mix into the center of a patty, make another patty for a top and seal that goodness inside...

...slap them bad boys on the grille...

...devour...ThumpUp Drool Drool

(i'll post pics of this deliciousness next time i grille, prolly this weekend)
