Pan fried with a bacon and apples or grilled over hardwood charcoal are my two favorites. Brett Laidlaw has an excellent cookbook called Trout Caviar with lots of great wild/foraged food recipes including one for buckwheat trout with sorrel sauce which is take on Trout a la Meunière. Its a bit more fuss but worth it.

How about smoking fish? what's your go to brine recipe?
